Add oil,ginger and pork;stir fry until golden brown. In a small pot, cook rice according to package instructions. Meanwhile, pat pork dry with a paper towel and add to a medium bowl. Season with salt and toss with cornstarch until coated.

Stir fry pork in small batches until browned, (it does not need to be cooked all the way through). Remove from pan and set aside. Add more oil to the pan if needed and add vegetables. Slice the pork thin and add to the skillet. Remove to a plate and set aside.
