So the normal ramen you see in restaurants is usually noodles, meat and a few vegetables in a broth right? (Although soup-less style is becoming more and more popular) The broth usually defines the kind of ramen it is; Shoyu, salt, tonkotsu, and miso. - Diperlukan of For the broth.
- Diperlukan 3 qts of water.
- Dibutuhkan 3 sheets of nori, torn in half.
- Siapkan 6 of beef bouillon cubes.
- Sediakan 1 of medium sweet onion.
- Siapkan 4 cloves of fresh garlic.
- Dibutuhkan 2 of "x4" fresh ginger root.
- Sediakan 1/4 cup of fish sauce.
- Sediakan 2 tbs of mirin.
- Sediakan 1 tsp of anise extract.
- Dibutuhkan 1/2 tsp of almond extract.
- Siapkan 1 tsp of sesame oil.
- Diperlukan 1/3 Oz of Thai basil.
- Siapkan 1/2 of lime.
- Sediakan of Other stuff.
- Sediakan 2 of pkgs chukka soba, dried.
- Diperlukan 6 of eggs.
- Diperlukan 1 tbs of baking soda.
- Gunakan 12-14 Oz of NY steak. Deboned, fat trimmed, cut to 1/4 "slices.
- Dibutuhkan of Sea salt.
- Gunakan of White pepper.
- Diperlukan of Garnish.
- Gunakan leaves of Thai basil.
- Diperlukan of Shiracha sauce.
- Sediakan slices of Lime.

- Sediakan of Green onions, cut on the bias.

In short, abura soba is ramen with a great editor. Most versions of ramen involve a trio of liquid elements: fat (often lard), tare (a concentrated seasoning base), and broth. Leave out the fat or tare and you just have shitty ramen.

- Peel the garlic and ginger. Cut ginger in 1/4 inch slices. Smash the garlic cloves and ginger slices. Add to broth. Simmer 10 minutes.
- Add rest of broth ingredients. Simmer for ten more minutes..
- While you have been making the broth. Remove steak from refrigerator. Remove the bone and trim fat. Slice across the thin side of the steak, into 1/4 inch slices. Lay out on a cutting board, and lightly sprinkle with sea salt and white pepper. Let meat come to room temperature..
- Strain broth through a wire strainer. Place broth back on stove and continue to simmer..
- Place 2 qts water, 1 bouillon cube, and 1 tsp sesame oil in another pot. Bring to a boil. At the same time turn up the heat and bring broth to a rolling boil..
- Add noodles to water pot. Cook 3 to 4 minutes. Drain, and rinse in cold water..
- Put noodles in a bowl. Place raw beef on top. Slowly run boiling broth over meat while filling bowl. Add desired garnishes. Sprinkle black pepper over egg. Serve immediately. Enjoy..
